We tried quinoa for the first time last week since we've been hearing its really healthy. We bought it at our local grocery store and had to ask one of the employees on where to find it.

Me: Excuse me, where can I find quinoa?
Worker: What do you need?
Me: Quinoa.
W: Keeeen-wa? How do you spell it?
Me: Q U I N O A
W: What's that?!
M: It's a small grain
W: hmm..let me ask someone

After asking 3 people while one person looked for it, we ended up finding it ourselves. It was in the rice aisle. We couldn't spot it the first time because we didn't know how the packaging/bag looked.

Here are 7 benefits of quinoa:
3. Quinoa contains Iron.
5. Quinoa is rich in magnesium.
7. Quinoa has a high content of manganese.
Because I cooked salmon the night before, I wanted to pair it with something healthy and green. Broccoli or spinach is my usual go-to. This time I tried baking them instead of steaming. Never done this before but it was easy and turned out pretty good.

It is true that in order to lose weight or get stronger you have to follow the 20% exercise and 80% diet rule. Don't get me wrong, I'm not completely eliminating fried chicken or all you can eat korean bbq, but I am eating those kinds of foods in moderation and more importantly all meals with portion control while exercising 3-4 times a week. To health!
Well the cake pop side hustle died down, which means my future posts will solely be for me to remember recipes (sweet & savory) I've tried...and of course share them with you! I have some foodie pics in my camera roll, but never got a chance to post them. Time to play catch up..

I came across the words, 'Thai style shrimp & pineapple fried rice' in a cooking magazine while waiting for my appt. today, which automatically caught my eye. I was inspired. :) 1.) I was hungry and 2.) I was thinking we have plenty of shrimp at home. I read the recipe and seemed simple enough. I had all the ingredients at home already so all I had to do was call my sous chef (the bf) to cut the onions and cilantro and defrost the shrimp. Our dinner was ready in 15 minutes. Perfecto!

I'm a huge fan of Umami burger. My favorite is the truffle burger, and if you know truffle like I do then you know it's like crack...makes you crave for it more and more. I decided to make my own version of truffle burgers for our Niner vs. Giants championship game party. It was ah-maz-ing, and a winner in my book as my friend said, "I think this is better than Umami." Now if I can perfect Umami's garlic aioli, I'm set.

So we didn't make it to Superbowl. A heartbreaker, but a good Niner season nonetheless.

INGREDIENTS:

11 Tablespoons unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon sea salt
1 teaspoon cinnamon
2 ½ cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
3 regular sized Hershey’s bars, broken into pieces
1-2 packages graham crackers, broken into squares

Directions:
Preheat the oven to 375 degrees. Line baking pans with parchment paper. I used one 11x17 pan and one 9x13 pan but you can really use any sized pans you want.

Lay out graham crackers side by side on the pans as close as possible (they should be touching). I used 16 graham cracker squares on one pan and 10 squares on another. You may have to add or remove graham crackers according to how much dough you have. If you want your cookies thicker you will use more dough and less graham crackers.
In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon to combine. Set aside.

In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.

Add the flour mixture to the butter mixer and combine on low speed.

Fold in the chocolate chips and marshmallows. Chill dough in refrigerator for 1 hour to overnight (I did one batch right away and another after chilling overnight and found there was no difference.)

Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. I averaged about 1 1/2 tablespoons of dough per graham cracker square as seen in the picture above. Press down slightly with fingertips.

Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want.

Bake for 5 – 7 more minutes or until dough is beginning to turn golden brown at the edges. Remove to a wire rack to cool. For clean cutting make sure cookies are completely cool and cut with a sharp knife.
