S'more Cookies

I want to make these bad boys soon.

INGREDIENTS:
11 Tablespoons unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon sea salt
1 teaspoon cinnamon
2 ½ cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
3 regular sized Hershey’s bars, broken into pieces
1-2 packages graham crackers, broken into squares

Directions:
Preheat the oven to 375 degrees. Line baking pans with parchment paper. I used one 11x17 pan and one 9x13 pan but you can really use any sized pans you want.

Lay out graham crackers side by side on the pans as close as possible (they should be touching). I used 16 graham cracker squares on one pan and 10 squares on another. You may have to add or remove graham crackers according to how much dough you have. If you want your cookies thicker you will use more dough and less graham crackers.
In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon to combine. Set aside.

In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.

Add the flour mixture to the butter mixer and combine on low speed.

Fold in the chocolate chips and marshmallows. Chill dough in refrigerator for 1 hour to overnight (I did one batch right away and another after chilling overnight and found there was no difference.)

Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. I averaged about 1 1/2 tablespoons of dough per graham cracker square as seen in the picture above. Press down slightly with fingertips.

Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want.

Bake for 5 – 7 more minutes or until dough is beginning to turn golden brown at the edges. Remove to a wire rack to cool. For clean cutting make sure cookies are completely cool and cut with a sharp knife.

Secret ingredient chocolate chip cookies

The other day I had a dinner date with my friend Susan. While she cooked the main entree, I baked chocolate chip cookies to pair with tiramisu ice cream for our own version of a pizookie. After eating steak, salmon, potatoes, and a pizookie, I was left with a happy stomach and a good nights rest. :)

To infinity and beyond

Mark and My throw the cutest birthday theme parties. They had a Willy Wonka theme for Jah's 1st birthday, and this year it was Toy Story. Adorable. I helped My make the Buzz light year cake (not pictured) and the star cookies. The pig and alien cupcakes were my fave.

Madeleines


The madeleine or petite madeleine is a traditional small cake from Commercy and Liverdun, two communes of the Lorraine region in northeastern France. Ms. Badar was kind enough to share her recipe with me. Merci Beacoup mademoiselle!

To celebrate Jeff's dirty 30th birthday at Feel Karaoke, I wanted to attempt to make madeleines. Outcome: successful! As you can see in the picture, I added my own little concoction to the madeleines. It's not nutella this time, but melted reese's peanut butter cups. If I had the ingredients, I would've also dipped the madeleines in melted semi-sweet chocolate, then topping it off with some shredded coconut. Mmm!

INGREDIENTS:

1 and a half sticks of real butter
2 eggs
1 cup sugar
1/4 tsp baking powder
1/2 tsp vanilla extract*
1 cup flour
Pam for baking (spray)
Powdered sugar (optional)

Preheat oven to 320 degrees
Melt butter (by pan, not microwaved); set aside to cool to room temperature
Mix eggs, sugar, baking powder and extract
Alternate flour and butter (very important to alternate)
Mix well
Spray madeline pans (molds) with Pam
Place half a spoon of mix into each mold
Bake at 320 for 10-12 minutes until edges are golden brown
Cool cookies 5 mins before removing from molds (w/ spoon)
Sprinkle madelines with powdered sugar if desired
*banana or almond extract may be substituted for different flavor
**other possibilities: add lemon or orange zest, dip into chocolate...



My baking craze of the day did not stop there. Jeff loves my oatmeal cookies so I also baked a BIG oatmeal cookie cake. I doubled the oatmeal recipe I previously listed and flattened it with my hands into a perfect circle. Baking time was about 5 minutes longer, but oven times may vary. You know it's done when the cookie has golden brown edges.

What's a party without dessert? A tasteless one.

I baked my infamous oatmeal cookies along with a new found treat, s'more cookies, for the Pacquiao vs. Cotto fight. Without a doubt, the fight ended on a sweet note with Pacquiao winning and with one of these cookies in my mouth!


Oatmeal cookies
1/2 cup (1 stick or 4 ounces) butter, softened
2/3 cup light brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (I often use a half teaspoon, but I like more salt in my baked goods)
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped (optional)

Preheat oven to 350°F (175°C).

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.

At this point you can either chill the dough for a bit in the fridge and then scoop it, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away, if you’re impatient, but I do find that they end up slighly less thick.

The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.

S'more cookies

1 package of Chocolate Chip Toll house cookies
1 bag of marshmallows
1 bar semi-sweet chocolate

Bake the chocolate cookies according to directions stated on package. Cut marshmallows horizontally and place on top of cookies the last 2 minutes so it becomes smooth. After two minutes, carefully remove cookies out of the oven and let cool for about 5 minutes then transfer to a cookie rack. Press marshmallows evenly with your finger. I placed the chocolate bar in a ziplock bag and microwaved it until smooth. Feel free play with the chocolate and make whatever design you'd like. Enjoy!
