Madeleines


The madeleine or petite madeleine is a traditional small cake from Commercy and Liverdun, two communes of the Lorraine region in northeastern France. Ms. Badar was kind enough to share her recipe with me. Merci Beacoup mademoiselle!

To celebrate Jeff's dirty 30th birthday at Feel Karaoke, I wanted to attempt to make madeleines. Outcome: successful! As you can see in the picture, I added my own little concoction to the madeleines. It's not nutella this time, but melted reese's peanut butter cups. If I had the ingredients, I would've also dipped the madeleines in melted semi-sweet chocolate, then topping it off with some shredded coconut. Mmm!

INGREDIENTS:

1 and a half sticks of real butter
2 eggs
1 cup sugar
1/4 tsp baking powder
1/2 tsp vanilla extract*
1 cup flour
Pam for baking (spray)
Powdered sugar (optional)

Preheat oven to 320 degrees
Melt butter (by pan, not microwaved); set aside to cool to room temperature
Mix eggs, sugar, baking powder and extract
Alternate flour and butter (very important to alternate)
Mix well
Spray madeline pans (molds) with Pam
Place half a spoon of mix into each mold
Bake at 320 for 10-12 minutes until edges are golden brown
Cool cookies 5 mins before removing from molds (w/ spoon)
Sprinkle madelines with powdered sugar if desired
*banana or almond extract may be substituted for different flavor
**other possibilities: add lemon or orange zest, dip into chocolate...



My baking craze of the day did not stop there. Jeff loves my oatmeal cookies so I also baked a BIG oatmeal cookie cake. I doubled the oatmeal recipe I previously listed and flattened it with my hands into a perfect circle. Baking time was about 5 minutes longer, but oven times may vary. You know it's done when the cookie has golden brown edges.
