Sprinkles Cupcakes

My sister drove up from SD this weekend to hang out, and if you know her well enough you know that she absolutely LOVES Sprinkles cupcakes.  She even met the founder of Sprinkles! I wouldn't be surprised if she receives  the #1 customer [who keeps our business going] award.

Oreo cupcakes

Happy Friday! I had cookies and cream cravings while I was at work today so I made a batch of these oreo cupcakes. Yummm-O. I'm bringing some for my cheerleader's second competition tomorrow. Hopefully the sugar will lead them to victory. I'll be one proud coach. Let's GO KNIGHTS!

Yield – 18 regular size cupcakes

INGREDIENTS:
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 1/2 cups sugar
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
6 large egg whites (3/4 cup)
3/4 cup milk
2 teaspoons vanilla extract
1 tablespoon sour cream
15 crushed Chocolate Sandwich cookies
9 Chocolate sandwich cookies cut in half (for garnish)
Directions:

1.) Set rack at the middle level in the oven and preheat to 350 degrees (I set mine to 325 and baked it for about 20 mins)

2.) Line Cupcake tins with papers.

3.) In a large bowl, beat butter and sugar for about 5 minutes, until light and fluffy.

4.) Stir together flour, baking powder and salt. Set aside.

5.) Combine egg whites, milk, sour cream, and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape the bowl and beater often. Fold in the crushed sandwich cookies. (I was too excited and folded it a lil too much which is why the cupcake has a brownish color to it...taste did not change tho!) Next time I'll try making it so its more white than brown.

6.) Scoop 1/3 cup of batter into each cupcake liner. Bake 15-17 minutes until toothpick comes out clean. Remove cupcakes from pan and let cool completely before frosting.

*Top with more crushed oreos, cut one in half, OR use orea mini bites.

For a quicker verson buy 1 package of white cake mix, follow directions on the box, add crushed oreos, and top with your favorite frosting.Wallah!

Ferrero Rocher Cupcakes

I was watching Cupcake Wars one day and had an 'aha' moment. I thought to myself..you know what would be really tasty? Ferroro Rocher cupcakes! Here they are... just another idea brought to reality. Wish you could see right through these cupcakes because there's an actual ferrero rocher in the center. I made them for our Superbowl party and they were a huge hit.

INGREDIENTS
yellow cake mix...when you dont have time to make it from scratch ;)
vegetable oil
eggs
ferrero rocher chocolates
nutella
heavy cream
gold sprinkles (optional)
gold cupcake foil (optional)

Directions:
Freeze ferrero rocher
Follow the cake directions on the box
Pour batter a little less than half way in each cupcake foil
Place a ferrero rocher choclate in the middle (don't worry, the chocolate wont melt in the oven)
Bake according to time on the cake box and there you go!

Now for the nutella ganache
1/2 cup Nutella
1/2 cup heavy cream

Cook in heavy-bottomed sauce pan over MEDIUM heat*, stirring constantly until the mixture is completely smooth (~7-10 minutes). Let ganache cool slightly (~ 5 minutes). With a spatula smooth ganach on each cupcake. Let the ganache cool completely before serving then add the gold sprinkles.

Mark and My throw the cutest birthday theme parties. They had a Willy Wonka theme for Jah's 1st birthday, and this year it was Toy Story. Adorable. I helped My make the Buzz light year cake (not pictured) and the star cookies. The pig and alien cupcakes were my fave.

Vanilla Wafer Cream Cheese Cupcakes w/ Nutella


This is one of La la's childhood treat. While baking, she became nostalgic of times when her aunt use to bake these when she was a kid. Can you guess what we added to make her aunt's recipe even more sweet?That's right, it's nutella! You'll often see nutella mentioned on my blogs as I am a huge fan.

INGREDIENTS:
8 oz cream cheese
Nabisco vanilla wafer
1 tsp vanilla extract
2 eggs
1/2 c sugar

Mix cream cheese vanilla extract, eggs, and sugar together. In a cupcake foil, place vanilla wafers at the bottom of first then pour mix half way. Bake at 350 degrees for 15 minutes (oven times may vary) Once cupcakes are cooled, place a slice of fresh strawberries or preserved cherries on top. Nutella is the last step. If you do not have a pastry bag, you can put the nutella in a ziplock and microwave it for 30 seconds or until it melts. Cut a small hole in the corner of bag and drizzle away. Place in the refrigerator for an hr to set.
